Clean Pumpkin Spice Pancakes

Just in time for fall! These pancakes have amazing flavor. I LOVE PUMPKIN! =]

Ingredients

1 1/2 cups Oat Flour

2 tbsp Splenda

1 tbsp baking powder

1/2 tsp sea salt

1 tbsp cinnamon

1/4 tsp allspice

1/4 tsp nutmeg

4 egg whites

1/2 cup canned pumpkin

1 1/2 cups unsweetened almond milk

*To make these protein pancakes instead, use only 1 1/4 cup of oat flour and 2 scoops of your favorite vanilla protein.

 

Directions

Preheat griddle to medium/high heat.

Combine oat flour, Splenda, baking powder, salt, cinnamon, allspice and nutmeg in a bowl.

Whisk in egg whites and pumpkin. 

Mix in almond milk then add wet ingredients to dry ingredients and mix well. 

*Reminder to spray your griddle if it’s not a non-stick. 

Scoop batter onto griddle. Cook 3-5 minutes on a side or until browned. 

*Makes 10 pancakes
