SWEET + SPICY BAKED CAULIFLOWER
Vegetable sides are my favorite and I am always looking for new ones to add to your dinner rotation. Cauliflower is one that I don’t typically cook because it has to be done just right. It can easily taste kind of bland. Anyway, this recipe is AMAZING. I hope you love the sweet and spicy flavors!
Ingredients:
1 head cauliflower, cut into pieces
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons green onions, sliced
1 tablespoon sesame seeds
1/3 cup honey
2 garlic cloves, minced
¼ cup coconut aminos
1 tablespoon sriracha
½ tablespoon coconut vinegar
Directions:
1. Preheat oven to 400 degrees.
2. In a bowl, combine cauliflower pieces and add olive oil, garlic powder, salt and pepper. Mix well until all pieces are coated evenly. Spread onto a baking sheet in one layer.
3. Bake in oven for 18-20 minutes, until cauliflower is golden brown.
4. While cauliflower is baking, in a small bowl, combine green onion, sesame seeds, honey, garlic, coconut aminos, sriracha and coconut vinegar. Whisk ingredients together.
5. Transfer ingredients to a sauce pan and warm on medium heat for about 5 minutes. While heating, whisk frequently to avoid burning the sauce.
6. Once sauce is warm, add baked cauliflower and stir to coat each cauliflower piece with the sauce.
7. Enjoy!
